Black Bean Soup – approx. 4 servings
1 tbsp canola oil
1 small onion, chopped
1 tbsp chili powder
1 tsp ground cumin
2 cans (15 oz) of black beans, rinsed
3 cups of water
1/2 cup prepared salsa
1/4 tsp salt
1 tbsp lime juice
Optional garnish:
4 tbsp reduced-fat sour cream
2 tbsp chopped fresh cilantro
Directions:
Heat the oil in a large saucepan over medium heat. Add the onion and cook about 2-3 minutes, stirring often until the onion begins to soften. Add chili powder and cumin. Stir for 1 more minute. Then add beans, water, salsa and salt. Bring to a boil, then reduce heat and allow to simmer for 10 minutes. Remove soup from the heat and stir in lime juice.
Next, transfer half of the soup to a blender and puree, (Please remember use caution when pureeing hot liquids). Stir the puree back into the saucepan.
Add optional garnish of sour cream and cilantro and enjoy!
