February Cheese and Wine of the Month

It’s certainly February with frigid temps and snow storms. Luckily, here in Wisconsin, we know the way to enjoy these rough wintry days. Enjoying a tasty cheese and great bottle of wine is one of our favorite ways to relax in the winter. So, here is Hill Country Market’s pick of cheese and wine for February to help with the winter blues.

February Cheese of the Month:Purple Haze Cheese with Wine

Cypress Grove Purple Haze

If you’re looking for a unique spin on cheese, look no further than Cypress Grove’s Purple Haze cheese. Purple Haze combines flavors of lavender and wild fennel pollen. This award-winning goat cheese packs a flavorful punch and is a delicious addition to a fresh salad with berries and toasted pecans. It’s also a great one to experiment with pairing options and have fun using it to develop unique culinary creations.

February Wine of the Month:

Aquinas Pinot Noir

February Wine of the MonthThis well-balanced Pinot Noir is sure to become a favorite. Aquinas aptly describes their Pinot Noir as having, “aromas of cherry reduction, strawberry, vanilla and subtle clove notes. On the palate, this medium-bodied wine is full of fresh cranberry flavors with intricate notes of raspberry tart and toasted marshmallow,” (www.aquinasnapavalley.com). In other words, this Pinot Noir is pretty much delicious. It’s also a great wine to serve with a variety of dishes. To enjoy some great pairing flavor, try it with dishes that involve fennel, mushroom, fresh veggies, or goat cheese.

Fresh Start: Nutritious Black Bean Soup Recipe

Cuban Cuisine: Black Beans SoupLooking for a tasty, health-conscious recipe to enjoy this year? Check out this black bean soup recipe.

Nutrition and Vitamins: Iron, Potassium (15% daily value), Vitamin C (15% daily value), and Folate (22% daily value)

 

Black Bean Soup – approx. 4 servings

1 tbsp canola oil

1 small onion, chopped

1 tbsp chili powder

1 tsp ground cumin

2 cans (15 oz) of black beans, rinsed

3 cups of water

1/2 cup prepared salsa

1/4 tsp salt

1 tbsp lime juice

Optional garnish:

4 tbsp reduced-fat sour cream

2 tbsp chopped fresh cilantro

Directions:

Heat the oil in a large saucepan over medium heat. Add the onion and cook about 2-3 minutes, stirring often until the onion begins to soften. Add chili powder and cumin. Stir for 1 more minute. Then add beans, water, salsa and salt. Bring to a boil, then reduce heat and allow to simmer for 10 minutes. Remove soup from the heat and stir in lime juice.

Next, transfer half of the soup to a blender and puree, (Please remember use caution when pureeing hot liquids). Stir the puree back into the saucepan.

Add optional garnish of sour cream and cilantro and enjoy!
